Chocolate-strawberry cake

Hey everyone!
Have a look at this perfection of yumminess. Don't tell me your mouth isn't watering! I created this recipe of a clean chocolate-strawberry cake a while ago and today I'm going to share it with you. It looks like a regular choco cake but there are so many good ingredients in there for you! And guess what. It's non baking! Oh and by the way, it's also vegan. :)

You'll need:

  • 1 cup of walnuts
  • 8 small pitted dates
  • 1/4 cup water
  • 140g strawberries
  • 1 frozen banana
  • 1 avocado
  • 3 tsp of raw cacao powder
  • 1 tbsp starch
---> First, blend the walnuts, dates and the water in a nice dough. Put it in your bake pan and press it with your hands 'till it's spread all over the pan. Then, after you washed the strawberries and removed their greens, cut them into slices and place them all over the dough crust. Next we're going to make the chocolate cream. Blend the banana, the avocado, the cacao powder and the starch all together, then distribute the smooth cream over the cake. Top it with some strawberries to make it look even nicer. Put the cake into the freezer for about 1-2 hours and you're finished! Enjoy your healthy clean cake without having to regret it!

  • 1 tbsp raw cacao powder (use more if you want it darker)
  • optional: oatmeal
---> Put all the ingredients into your blender and mix them until they're smooth. And that's basically it, I told you it would be easy :). Top your mousse with some walnuts and a little basil leave.

Hope you enjoy!

Cherry ice cream

Hi everyone!
It's finally summer here in Germany and who doesn't crave for a good old ice cream from time to time? And since we don't want to reach for all those unhealthy options you can get at every store, we're going to make our own clean cherry ice cream today! By the way, yes, I still do sometimes get an "unhealthy" ice cream just because I can't resist Ben and Jerry's... But it's just sometimes and I'm even doing something great by buying it because it's fair trade. :)

You'll need:

  • about 500g frozen cherries
  • 250g natural yogurt
  • 100g curd cheese
  • stevia
---> Put all the ingredients into your blender and mix them until they have a creamy consistency. I also topped it with natural yogurt and some chocolate sprinkles When I've made my ice cream I couldn't eat it right away, so I put it in the freezer. By the time I ate it and I made the photos it was frozen so I cut it into squares, but usually it's creamy.
Have fun recreating this recipe on a hot summer day!

Todays fruit bowl

Hi there!
I just wanted to quickly post what I ate for lunch today. Me and my family usually just eat fruit for lunch on the weekend, we call it "fruit time". So today I just chopped up a banana, two apricots and some cherries, put them in a bowl and drizzled some maple sirup over it. So yummy!

First try - my own muffins

Hello there!
Umm, yeah... That's the way my first try of making my own healthy muffins turned out. Yes, I know, they don't look exactly like muffins usually look, but hey - they taste amazing! Even though they didn't turn out the way I'd liked them and they are definitely improvable, I still wanted to share the recipe with you. I would describe the taste of those banana-apple muffins as chocolaty and fruity and they are very soft and wet (but still very delicious!). So give them a go and try them out!

You'll need for 8 small servings (or 4 bigger ones):

  • 5g hazelnuts
  • 5g almonds
  • 30g oatmeal
  • 20g whole wheat flour (if you want to leave it out, just take 50g oatmeal)
  • 2 bananas
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp stevia
  • 3/4 tbsp raw cacao
  • 1/4 apple
  • 1 tbsp maple sirup
  • 1 tbsp milk
  • 1 full tsp raw cacao
---> First put the hazelnuts and the almonds in your blender and shred them into small pieces until they're almost flour consistence. Then add the oatmeal and the whole wheat flour and stir them in. Take the remaining ingredients and blend them into a dough. Then put it into muffin containers, dice the apple and distribute them over the dough. While the muffins are in the oven for 20 minutes prep your chocolate sauce. Mix the maple sirup and the milk with the cacao. When the baking time is over let the muffins (or I'll better call them soft cakes because of their consistence) cool down. After that cover them lightly with the choco sauce and sprinkle some coconut flakes over them. And taadaa... It's time to enjoy your delicious healthy snack.
