First try - my own muffins








Hello there!
Umm, yeah... That's the way my first try of making my own healthy muffins turned out. Yes, I know, they don't look exactly like muffins usually look, but hey - they taste amazing! Even though they didn't turn out the way I'd liked them and they are definitely improvable, I still wanted to share the recipe with you. I would describe the taste of those banana-apple muffins as chocolaty and fruity and they are very soft and wet (but still very delicious!). So give them a go and try them out!

You'll need for 8 small servings (or 4 bigger ones):

  • 5g hazelnuts
  • 5g almonds
  • 30g oatmeal
  • 20g whole wheat flour (if you want to leave it out, just take 50g oatmeal)
  • 2 bananas
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp stevia
  • 3/4 tbsp raw cacao
  • 1/4 apple
  • 1 tbsp maple sirup
  • 1 tbsp milk
  • 1 full tsp raw cacao
---> First put the hazelnuts and the almonds in your blender and shred them into small pieces until they're almost flour consistence. Then add the oatmeal and the whole wheat flour and stir them in. Take the remaining ingredients and blend them into a dough. Then put it into muffin containers, dice the apple and distribute them over the dough. While the muffins are in the oven for 20 minutes prep your chocolate sauce. Mix the maple sirup and the milk with the cacao. When the baking time is over let the muffins (or I'll better call them soft cakes because of their consistence) cool down. After that cover them lightly with the choco sauce and sprinkle some coconut flakes over them. And taadaa... It's time to enjoy your delicious healthy snack.
